CREAMY DILL CHICKPEA SALAD WRAP 🌿
If you watched my stories you’ll know I was that kid who got dill pickle seasoning on her popcorn, every time, without fail 😅
I haven’t really used dill that much in years and I’ve really forgotten how much I LOVE IT! So often I reach for parsley, cilantro, basil when lil’ old dill is left out!
So here I am, making this creamily gorgeous chickpea salad wrap.. sorta like an egg salad but make it #vegan 🌱
#deets is creamy dill chickpea salad + avocado slices 🥑 + pickled red cabbage + a @geniusglutenfree beetroot wrap
CREAMY DILL CHICKPEA SALAD
-1 can chickpeas, drained and rinsed
-1/4 cup @followyourheart vegan mayo
-1/2 red onion, chopped
-1 garlic clove, minced
-2 heaping tbsp fresh or dried dill
-1/8 to 1/4 tsp salt (to taste)
1. Mash the chickpeas with a potato masher- being sure to leave a few whole for an awesome texture contrast
2. Add all the other ingredients to the bowl, mixing well- salting to taste.
Lasts 2-3 days in an air tight container in the fridge. Use on sandwiches, on toast, in salads, as a wrap filling.. anything! 🌟
