I was watching some YouTube video and they put chicken breasts, broccoli, potatoes, onions, and asparagus on a sheet pan with salt, pepper, and oil and baked it all for like 30 minutes and called it meal prep. DON'T DO THAT. it's not gonna be good no matter how good they tell you it's gonna be 😂
Here is the right way to do a sheet pan meal:
Chicken thighs, potatoes, bell peppers, and onions seasoned generously with paprika, chili powder, cumin, garlic, onion powder, salt, pepper, oregano, and olive oil. Mix everything well and bake at 425 for 30-40 minutes. Squeeze lemon juice on top when it comes out of the oven. Voila!
The difference is that chicken thighs have more flavor and don't dry out when baked. Potatoes, large pieces of onions and peppers will cook by the time the thighs are cooked through while asparagus only takes about 10 minutes to cook and then it gets stringy if overbaked.
You can adjust the seasonings to your liking and add different vegetables but make sure that everything takes the same time to bake so you won't end up with stringy mess!
You can serve this with Hummus and pita, or rice, tortillas, or even a salad 🥗
