FESTIVE BREAKFAST MUFFIN 🎅. Parsnip & potato hash brown, cranberry sauce, stuffing, sausage patty, melted cheddar and a fried egg in a toasted English muffin 😍. Who wants to get their mouth around this? 😋
🎅 Stuffing: shape 20g of stuffing into a patty and bake at 180C for 25 mins.
🎅 Sausage patty: squeeze the meat out of the casing of a sausage and re-shape into a patty. Bake alongside the stuffing (180C for 25 mins). Top with a slice of cheddar cheese 5 mins before it's cooked to allow the cheese to melt.
🎅 Parsnip & potato hash brown: grate 1/2 parsnip & 1 small potato, squeeze out the excess liquid, then mix together with any herbs/seasoning of your choice (I added sage & a pinch of salt). Heat a non-stick pan with a little oil and spoon into a round, cook for 3-4 mins on each side or until golden brown and crispy.
🎅 Remove the hash brown from the pan and set aside, then crack 1 egg into the pan. Cook until the white has set but yolk still runny.
🎅 Toast an English muffin, cut in half, then assemble the hash brown, 1 tsp cranberry sauce, stuffing, sausage patty and finally the fried egg.
