What are your easy, healthy go-to dinners? This is one of my fave bowls.. tofu, roasted sweet potato, zucchini and capsicum, spinach leaves and some edamame beans. You can also add some cooked brown rice or quinoa. At the start of the week I like to roast up a bunch of veggies and cook up a batch of rice and quinoa to have in the fridge ready to throw into a bowl. It makes it so much easier and doesn't take long! Oh and this one is super delish with an easy almond butter sauce (recipe below)
Mix 1 Tb almond butter, 1 tsp tamari or soy sauce and 2 Tb boiling water and stir. Add more water to desired consistency.
