CRISPY POTATO BITES with CREAMY HOT DIP💥🔥👅 okay it’s settled, this is now my new fav meal hehe. recipe & deets are down below!! have a happy Wednesday ❣️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ POTATO BITES —⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 4 small sweet potatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 4 small yellow potatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 1 tbsp coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 garlic powder⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 onion powder⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 chili powder⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 finely chopped cilantro⠀⠀⠀⠀⠀⠀⠀⠀⠀ 💥 s & p ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ••• chop up the potatoes into small cubes and then toss in a bowl with the coconut oil and all the seasonings⠀⠀⠀⠀⠀⠀⠀⠀⠀ ••• bake at 420 degrees for 20 minutes, flip & cook for 10 more minutes !! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ CREAMY SPICY DIP —⠀⠀⠀⠀⠀⠀⠀⠀⠀ ☄️ 4 tbsp of non dairy yogurt⠀⠀⠀⠀⠀⠀⠀⠀⠀ ☄️ 2 tbsp hot sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀ ☄️ 1/2 tsp maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀ ☄️ 1/2 tsp garlic powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ••• combine everything together and then top with finely chopped cilantro and red pepper fakes :) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ••• ENJOY !! ☄️💥🔥✨❣️🥰 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • ⠀⠀⠀⠀⠀⠀⠀⠀⠀ #instafood #foodstagram #veganrecipes #plantbased #plantbaseddiet #faithsfresh

Sweets & beets sandwich hit different 🤤🤤🤤 Let’s talk about *the layers* that make this sandwich absolutely 🔥 1) Sweet potatoes tossed with ancho chile powder and cumin - cooked in a cast iron skillet on the stovetop and then roasted in the oven. 2) Quick-pickled beets & red onions - TANG. 3) Parsley/cilantro tossed with fresh lemon juice to add brightness. 4) And lemon-y mayo spread onto both sides of the bread. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Adapted from @bonappetitmag’s recipe - https://www.bonappetit.com/recipe/spiced-sweet-potato-sandwich-with-feta. 1) Reduced the oil used to coat the sweet potatoes - I just eyeballed it but probably ended up using less than 1 tbs. 2) Made 1/2 batch of the mayo mix and still had lots leftover! Just use any vegan mayo. 3) I left out the feta to veganize the sandwich, but you could sub a vegan feta to keep that salty briny element! 4) Made the sandwich on Ezekiel bread, but it’s even more delicious on sourdough if you have some around!

ASPARAGUS szn + warmer weather got me feeling salads again! Blanched asparagus & green beans, chickpeas, sliced red onions, cherry tomatoes, chopped fresh basil and parsley, toasted almonds, hemp seeds, and dressed with a lemon tahini dressing. Coconut Caramel Peanut Bars by @hannah.banana182 🤤 - Serves: 6 bars - INGREDIENTS: For the Base: ▪️40g Coconut Flour ▪️30g Oat Flour ▪️20g Brown Rice Syrup ▪️25g Condensed Coconut Milk @naturescharm Caramel: ▪️100g Peanut Butter ▪️60g Condensed Coconut Milk ▪️40g Brown Rice Syrup ▪️15g Coconut Oil ▪️Chopped Peanuts (optional) Choc Coating: ▪️60g Dark Chocolate ▪️10g Coconut Oil METHOD: 1. Combine base layers and press into a lined tin. Put in the fridge. 2. Heat condensed coconut milk and coconut oil in the microwave for 45 seconds. Add peanut butter and syrup and stir until combined. Pour over base and put in the freezer. 3. Once set press chopped peanuts onto the top of the caramel and cut into bars. 4. Melt dark chocolate with coconut oil and pour over bars. Store in the freezer as this is a super gooey caramel. 💛

Green chickpea and lemon soup. The lemony pistachio and pea sauce from the other day got me thinking of other ways to use lemons in savory dishes. This one is very bright! I sautéed red chili flakes, onions and garlic in a little mushroom broth, then added water and a few potatoes cut in small pieces, lots of herbs, a little dill and cumin, and 1/2 a bag of frozen corn. I let this cook while I roasted a handful of cherry tomatoes and a few onion slices with garlic powder. I mixed most of it in, setting aside a few pieces for garnish. When the potatoes were tender I added vegetable broth, the frozen green chickpeas and a handful of shredded purple cabbage. After about 5 minutes I added the juice of a large lemon, stirred, cut the fire, then covered while we had our appetizer. This soup is a lovely summertime meal. 🍋NO-BAKE LEMON & COCONUT OAT BITES 🥥 - This simple no-bake sweet treat has a light, refreshing vibe that tastes like warm summer days. Plus, it’s loaded with healthful goodness like fiber, healthy fat, protein, vitamins, minerals and disease-fighting antioxidants. - INGREDIENTS (MAKES ABOUT 23 BITES): ——————————————————— ✅ 1 cup of gluten-free, organic rolled oats ✅ 1 cup of organic pitted dates, soaked in water for at least an hour to soften ✅ 1/2 cup of unsweetened organic coconut shreds + more for topping if desired ✅ 1/4 cup of organic chia seeds ✅ 2 tablespoons of organic lemon juice - NINJA PREPARATION: ——————————— 1️⃣ Line a baking sheet or large plate with unbleached parchment or wax paper. 2️⃣ Put all the ingredients in your food processor and mix until a dough forms. 3️⃣ Using your hands, roll about a tablespoon of the dough into a ball and place it on the lined dish. Repeat until all the dough is used up. (You should end up with around 23 bites.) Let’s just put aside judgement, negative stigmas, and ‘what you’ve always known’, and think about it. I haven’t eaten cow, pig, or lamb in about 10 years, I’ve been vegan for roughly 6. If we needed animal flesh to survive, wouldn’t I (and thousands of others) be dead? Just because we have always thought one thing, it doesn’t mean we can’t do our own research and align our morals with our actions. Farmed animals consumed by humans, are fed grains (and grass if they aren’t factory farmed), they are the middle man, vegans just go straight to the source of nutrients, vegetables! ‘Just because it taste good’ isn’t an excuse with so many other cruelty free options. If you can live perfectly healthy without having to pay someone to kill an innocent animal for your meal, then why the fuck would you choose the cruel option? Please think about this next time you do your shopping. It isn’t about me or you, it’s about being the voice for those who can’t tell you they’re suffering. We know that comparison is the thief of joy. But when you are comparing your healing to another it is a disservice to yourself and you're blocking your ability to listen to your unique body and what it needs. You're cutting off the flow of divine intuition and guidance. . Every single person is unique and regardless of the label/diagnosis given to a health condition, the causative factors are going to differ for every single person. Yes there are many similarities but ultimately each person has their own set of emotional traumas, toxic load, pathogens and system imbalances. This means that your approach needs to reflect that and not be a cut copy of that guy on Instagram who eats the same meticulous and never wavering diet of melon, smoothie and raw, fat free salad each day. . Also, WOMEN, our bodies change throughout our menstrual cycles and therefore so should our healing protocols. If you're practising deep tissue cellular cleansing, it may be more effective to go deeper early on in your cycle, but leading up to menstruation more building foods are needed over cleansing. More fats, amino acids and warming foods over cooling. If your body asks for a sweet potato and avocado would you eat that, even though your favourite influencer is eating 100% raw and you've been conditioned to believe raw is law? . Do you find yourself scrolling through Instagram comparing your healing journey to others? . Are you feeling you are on the right track and suddenly you're questioning everything you're doing to heal? . Am I doing enough? Maybe I should be eating that and avoiding that? . Are you in a constant state of fear? . BE TRUE TO YOU! Let that divine guidance and intuition flow freely without obstruction to you, dear one.

Time to kick things up a notch! Give these Spicey Cauliflower Bites! RECIPE BELOW! *************************************************** Preheat your oven to 425 and line a cookie sheet with parchment paper. Line your cookie sheet, you’ll thank me later. Mix 1/2c of flour with 1/2c of water. Add 1 head of cauliflower, cut into trees, to the bowl and stir until cauliflower is coated. Chuck that in the oven for 15 minutes, flipping at about the 10 minute mark. (Timings can change based on where you live. Watch the cauliflower, flip when the tops of them are looking dried out. This means the bottoms will be toasted.) While the cauliflower is cooking stir together 1/2c of your hot sauce choice, 1/4c of rice vinegar, and 2 tap of soy sauce. When the cauliflower are done baking, throw them back in the bowl and toss the hot sauce on top. Mix until well coated. Put the cauliflower back of the cookie sheet and chuck it back in the oven for 5 mins. These are DELICILIOUS with peanut sauce - recipe coming soon - hot or cold. Here's the recipe of the most amazing beet salad you'll make this summer! - You make someone very happy when you tap the ❤️ - 𝗣𝗹𝗲𝗮𝘀𝗲 𝗗𝗠 𝗼𝗿 𝗰𝗼𝗺𝗺𝗲𝗻𝘁 𝘄𝗶𝘁𝗵 𝗮𝗻𝘆 𝗾𝘂𝗲𝘀𝘁𝗶𝗼𝗻𝘀 𝗮𝗻𝗱 𝗮 𝗳𝗲𝗲𝗱𝗯𝗮𝗰𝗸 - 3 beets oven roasted until you can poke through them (350f in a foil bag) 1 orange cut in supreme* squares Dressing: Zest from half an orange Zest from half a lemon/lime (optional) 1 small shallot finely chopped 3 tbsp of pine nuts or pistachios (optional) Optional 1 tsp honey or maple syrup Optional (to taste) 1 crushed/microplaned* clove of garlic 2 tbsp squeezed lemon juice 1 tbsp red wine vinegar 1 tbsp cherry or balsamic vinegar 1 tbsp light olive oil or avocado oil Optional: chopped fresh cilantro/parsley/mint Directions: Make a foil bag and insert the beets with salt, a tablespoon of oil, salt pepper and some herbs such as rosemary or thyme. Bake on 350f for 45 to 60 min until you can smoothly poke them through. While they bake prepare the dressing. Super finlely chop the shallot, garlic and (optional) herbs (fresh mint is highly recommended) and mix all the dressing ingredients very well (this will make a huge difference to flavor). Cool and peel the beets, cut them up to about 1/2 an inch cubed and cut the orange in the same size cubes. Chinese Bayberry anyone??? This berry looks spiky, but it’s actually soft and a little crispy to bite into. They have a sweet and tart taste to them. To me they were a cross between a plum, strawberry and lychee. Such a very unusual fruit. They are actually in the berry family. . . One of the things I love about living in Asia is being able to try exotic fruits I never ordinarily would be able to try.
