Avocado and egg are really a match made in heaven. So tofu scramble and avocado are even better, right, yes I am. I know that tofu scramble on toast may not be groundbreaking, but it has become a serious addiction of mine. The key to making this toast, is two things, seasoning every component, no plain avocado mashed directly on toast here, and secondly, black salt or kala namak @the_spice_lab - it gives the most amazing egg flavor, although be warned it does have quite the sulfur smell when it touches anything hot. 1. Avocado Part - mash together avocado, lemon, black pepper, salt, and nutritional yeast. 2. Tofu Scramble - on medium heat coat pan with a dash of olive oil and crumble in some extra firm tofu, adding a dash of turmeric, black pepper, and nutritional yeast. Stir and cook until the tofu has a slight bite to it, but is relatively soft, about 5-6 minutes. 3. Toast up some bread, I used @foodforlifebaking sesame bread, slather the avocado mixture and put the scramble on top. Finally sprinkle with kala namak and slice, diagonally of course! Hey everyone! 😄 Who is excited about another killer vegan dessert recipe? 🙋🏾‍♂️⁣ ⁣ Yesterday, I tapped into my creative side by baking a dessert that incorporated elements from some of my previous kitchen creations. Thus, I made a mouthwatering 𝐕𝐞𝐠𝐚𝐧 𝐁𝐢𝐫𝐭𝐡𝐝𝐚𝐲 𝐂𝐚𝐤𝐞 𝐒𝐤𝐢𝐥𝐥𝐞𝐭 𝐂𝐨𝐨𝐤𝐢𝐞! 🎂🍪 To accompany the skillet cookie, I also made some homemade strawberry sauce which is to die for! 😋 And when things could not get any better, I also plated a generous scoop of @haagendazsca’s “Non-Dairy Peanut Bitter Chocolate Fudge” ice cream! 🍨 Overall, this is a dessert lover’s dream! 😍⁣ ⁣ INGREDIENTS:⁣ 🎂 1/2 Cup Vegan Butter (I used @earthbalance’s Soy Free Traditional Spread) 🧈⁣ 🍪 1 Cup Brown Sugar⁣ 🎂 2 Tbsp Unsweetened Almond Milk⁣ 🍪 1 Tsp Vanilla Extract⁣ 🎂 1 1/2 Cups All-Purpose Flour⁣ 🍪 1/2 Tsp Baking Soda⁣ 🎂 1 Tbsp Cornstarch⁣ 🍪1/4 Tsp Salt⁣ 🎂 1/4 Cup Rainbow Sprinkles⁣ ⁣ INSTRUCTIONS:⁣ 1. Preheat oven to 350°F.⁣ 2. In a 10 inch cast iron skillet pan over low heat, melt the vegan butter. Next, remove the skillet from heat and add the brown sugar. Stir well to combine.⁣ 3. Add in the vanilla extract, unsweetened almond milk, then mix until well combined.⁣ 4. Stir in the all-purpose flour, baking soda, cornstarch, and salt. Next, stir in the rainbow sprinkles. Press dough evenly in the skillet with your hands or spatula.⁣ 5. Bake cookie batter in the oven for about 18 minutes, until the edges are golden brown. The inside should remain a little gooey. Place skillet on a cooling rack for a couple of minutes to cool.⁣ 6. Chia pudding with strawberry nicecream and coconut yogurt 🤤 Perfect way to start a day! CHIAPUDDING: - 3 tbsp chia seeds - 250 ml oat milk - 1 tsp vanilla extract - Maple syrup for taste NICECRRAM: - 1 frozen banana - 1/2 cup frozen strawberries - oat milk until it’s creamy 1. In a jar, whisk together all chia pudding ingredients and set aside 2+ hours in the fridge. (Stir after the hour). 2. Once ready to eat , place the banana, berries and plant milk in a blender. Process until smooth and creamy. Serve with coconut yogurt and fresh fruits. Barchette di melanzane 🍆. L'impasto di questa ricetta richiede il minimo sforzo ed assicura il massimo risultato! Queste barchette di melanzane sono davvero una bontà ❤️ ovviamente come sempre potete sostituire le melanzane con qualche altra verdura che avete già in casa! . Per le barchette vi servono: -130g di farina 1 -140g di farina di manitoba -160ml di acqua tiepida -5g di lievito di birra liquido (o solido, ricordate di scioglierlo in poca acqua usando poca dell'acqua prevista già dalla ricetta) -2 cucchiaini di sale -1 cucchiaio di olio -1/2 cucchiaino di zucchero . Mescolate prima tutti gli ingredienti e poi aggiungete l'acqua e cominciate ad impastare. Impastate per 5 minuti o fino a quando il composto sarà omogeneo e non appiccicoso. Laccate lievitare per 1 ora mezza 21-22° coperto con un panno umido. Nel frattempo dedicatevi alla preparazione del ripieno. Per prepararlo vi servono: -1 melanzana -1/2 cipolla -2 cucchiai di passata di pomodoro -olio -sale -qualche pomodorino -1 spicchio di aglio . Prima preparate le melanzane: tagliate a pezzetti la cipolla e cuocetela in padella con olio fino a farla dorare. Poi aggiungete le melanzane tagliate a cubetti e lasciate cuocere per 15-20 minuti. Aggiungete poi il sale e la passata, cuocete per qualche minuto e togliete dalla pentola. Nella stessa pentola cuocete ora i pomodorini, con uno spicchio d'aglio e l'olio. Dovete solo scottarli quindi basteranno davvero pochi minuti. Salate e pepate e togliete dal fuoco. Trascorsa l'ora e mezza di lievitazione dividete l'impasto in 6 parti e dategli una forma a barchetta o la forma che preferite. Disponetele distanziate sulla placca da forno coperta con carta da forno. Copritele nuovamente e lasciatele lievitare ancora per 40 minuti. Preriscaldate il forno a 220°, oliate le barchette e ponete al centro di ognuna un po' di melanzane. Infornatele per circa 30 minuti o fino a quando saranno cotte e dorate esternamente. Potete cuocerle per i primi 3 minuti sul fondo del forno in modo da farle diventare croccanti. Gli ultimi 5 minuti aggiungete anche i pomodorini. Sfornate e servite ancora calde! 😋 . . An indulgent meal of Bharli Vangi, watery tomato-masoor dal (the hotter the weather, the runnier our dal), sprouts salad with Alphonso mango. Finding small round purple brinjals is a less frequent delight so when I do get my hands on them, one dish that I almost always make has to be the Maharashtrian Bharli Vangi. I think it is one of those recipes that I enjoy seeing and having the brinjal whole (though of course you could always chop and cook with the same masala paste without compromising the taste). It just gives me a lot of joy to slice the brinjals and stuff it to my heart’s content and dote on them. Yes, I do (swipe to see the stuffed brinjals before being cooked if that sort of thing excites you!). The depth of flavour comes from the toasted sesame, desiccated coconut and peanuts and Goda Masala that are part of the paste that becomes the stuffing. This paste also lends a beautiful texture to the dish. I had some GoDa Masala from @bedekarfoods that I added to the paste but I have replaced Goda Masala with garam masala in the past and that tastes wonderful too. We ate this with rice for our dinner and with dosa next morning - the flavours seep in so beautifully when you leave it overnight or prepare in advance. That combination of coconut, peanuts and sesame is so delicious and versatile. Yesterday’s lunch was so delicious I had to share! Grilled potatoes + sweet potato leftovers are 👌🏼 added some mixed frozen vegetables sautéed in coconut oil and sea salt, along with some fresh tomatoes and cucumber. These hot days take a lot of energy out of me and it feels so good to refuel with good nutritious food. Getting that energy for the rest of the day but not needing a nap afterwards. All of this only took about 10 minutes to throw together, including the time to cook the veggies! Another great thing about this is how budget friendly all of this is! A bag of potatoes/sweet potatoes costs about $2.50, frozen veggies (even organic) only cost about $2! PEPPERMINT SPINACH NICECREAM POPSICLES [deutsch unten] 🌿These popsicles are super delicious for everyone who loves mild and tender peppermint, which covers the spinach completely. The raw unsweetened chocolate nibs give the whole thing a nice bite. Next time I will cover the ice cream with unsweetened chocolate glaze and see how that comes out. Recipe for 6-8 pieces: a big handful of spinach leaves 12-14 peppermint leaves 2 bananas 0.1 l water Method: Put all ingredients in the blender and mix until you have a smooth and beautiful mixture. Then put it into the ice cream moulds. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀🌿PFEFFERMINZ SPINAT NICECREAM EIS AM STIL Eine ganz feine Sache dieses Eis. Im Geschmack einfach nur mildes zartes Pfefferminz, das den Spinat komplett überdeckt. Die rohen ungesüssten Schokoladennibs geben dem Ganzen einen schönen Biss. Beim nächsten Mal werde ich das Eis mit ungesüsster Kouvertüre bedecken und sehen, wie das dann rauskommt. Rezept für 6-8 Stück: eine grosse Hand voll Spinatblättern 12-14 Pfefferminzblätter 2 Bananen 0,1 l Wasser Methode: Alle Zutaten in den Mixer geben und mixen bis eine glatte schöne Masse entsteht. But I promise I’ll do better next week😉 ⠀ Meanwhile super easy and dangerously delicious: ⠀ COCONUT COOKIES ⠀ 🌿100 g Aqua Faba ⠀ 🌿Pinch of salt ⠀ 🌿1 tbsp lemon juice (or 1/8 tsp cream of tartar) ⠀ 🌿1/4 tsp guar gum (optional) ⠀ 🌿150 g desiccated coconut ⠀ 🌿50 g almond flour ⠀ 🌿100g coconut sugar, processed into flour ⠀ Method: ⠀ ✅Pre-heat the oven to 170 degrees and line a baking sheet. ⠀ ✅Whip Aqua Faba with lemon juice, salt and gum. Start slow and take your time until it is whipped into a stable foam.⠀ ✅Mix all the dry ingredients in a bowl. ⠀ ✅Carefully mix Aqua Faba with dry ingredients. Don’t stir! Tarta raw de Coco y Mango (V-GF) 🌿. Deja de buscar la RECETA DEFINITIVA de tarta para este verano. Esta mal que yo lo diga pero esta que he preparado para @solnatural está para chuparse los dedos. Es muy muy fácil -prometido-, saludable, rica y apta para todo el mundo. La base son 4 ingredientes de nada, y la cobertura unos poquitos más. Como ingredientes principales el coco y el mango, una combinación EXPLOSIVA. ALL THE GREENS 💚. I don't know what it is but I feel SO HEALTHY when I eat or drink something green😂. Who's with me? Also, it's a super sunny day today so I was really craving a smoothie bowl this morning. So easy and so healthy🥰. I used: •1,5 Frozen banana 🍌 • 1 Nectarine🍑 • Frozen spinach 🥬 • Vegan protein powder 💪 • Spirulina • Hemp & Chia seeds Just put it all in the blender and add your favorite toppings on top 🥰😘 Also (side note): I have a new phone!! 🍓 За ягодовия чийзкейк освен лавината от харесвания и ваши снимки, получих в блога няколко коментара, че кремът е станал течен. Спазихте ли пропорциите, които дадох? Тествала съм го с тях 3 пъти и рецептата е наистина точна. Важното е кокосовото милки да е от кенче и да махнете течността на дъното му- тя ще направи крема ненужно течен. С кокосовото масло пък и престоя в хладилник стягането е гарантирано. Ако правите тортата в по- голяма форма и с повече крем, задължително сложете пропорционално и повече кокосово масло 😊 Вариант за допълнително стягане е с 2-3 с.л. кокосово брашно- аз винаги имам под ръка, но моята слабост към всичко кокосово е всеизвестна 😁 Направете втори опит, ако първият не е станал по план. Обещавам, че си заслужава! 🍓

The maharashtrain kanda poha and the street side poha available in M.P. differ slightly. Inspite of being a maharashtrian, I love the M.P wala poha better ⁠⠀ .⁠⠀ Here's the recipe for the quintessential M.P poha / Indori Poha⁠⠀ ⁠⠀ 2 cups - Poha (Flattened rice) of medium thickness⁠⠀ 1/4 cup - peanuts⁠⠀ 2 tbsp - Oil ⁠⠀ 4-5 Green chillies - cut in 1 inch pieces⁠⠀ 1 tsp - Mustard (Rai) seeds⁠⠀ 1 tsp - Cumin (Jeera) seeds⁠⠀ 1 tsp - Coriander (Dhaniya) seeds⁠⠀ 3/4 tsp - Turmeric (Haldi) powder⁠⠀ 1/5 tbsp - sugar⁠⠀ 1/2 tsp - Hing (Asafoetida)⁠⠀ Salt to taste⁠⠀ Water for rinsing the poha⁠⠀ ⁠⠀ 1. Rinse the poha in water thrice. After the third rinse fully drain out the water , and ret the poha in a covered contain for 12-15 minutes. This process helps in moistening the poha.⁠⠀ ⁠⠀ 2. In the meantime, heat oil in a pan/wok, once the oil is hot add the mustard seeds and let them temper. Then add the cumin and coriander seeds. Let them splutter for 15 seconds . (For enhanced flavour crush the coriander seeds slightly.) Then add Hing and stir well.⁠⠀ ⁠⠀ 3. Now add peanuts and roast them properly on medium to low heat. When they are cooked properly they will start cracking from the middle.⁠⠀ ⁠⠀ 4. Now add turmeric powder and green chillies then give a quick stir. ⁠⠀ ⁠⠀ 5. Then add the moistened poha, salt and sugar. Mix everthing nicely, cover the cooking vessel and let the poha cook for 10-12 minutes on medium heat. Stir occassionally. If the poha appears too dry sprinkle some water while cooking the poha.⁠⠀ ⁠⠀ 6. THAI ME UP 😉: Spicing up the afternoon with this RED CURRY & BURNT GARLIC RICE for lunch. I would normally get the ready made curry paste but limited availability of items ( Thanks to the never ending lockdown) has enhanced creativity . Ingredients: For Paste : Garlic , ginger ( didn’t get galangal), lemongrass , red chillies ( rehydrated), green onions ( shallots ) , cumin powder , coriander powder , turmeric, pinch of palm sugar . I also added a table spoon of peanut butter . Blitz all to make a paste . Cook the rawness out of the paste with half a cup of coconut milk . Add the veggies ( I used whatever I had in the refrigerator) . Mushrooms , peppers, carrots , beans, broccoli . Make sure the paste covers all the veggies so the flavour seeps in . Keep adding more coconut milk as the veggies cook . I had to add water as the curry kept thickening . Cook the veggies to your liking - crunchy or soft .Added the pan fried pieces of tofu at the end just before serving . Bahan : 120 gr DCC, potong kecil-kecil 50 ml sunflower oil (bisa diganti minyak makan lainnya) 140 gr gula kastor (gula berbutir halus) 80 ml air matang 130 gr terigu protein sedang 30 gr coklat bubuk 1/2 sdt baking powder 1/4 sdt garam halus . Cara : 1. Panaskan oven 180'c api bawah. 2. Lelehkan DCC + minyak dengan cara di tim. Sisihkan. 3. Campur air + gula dalam wadah tahan panas, tim dengan api kecil hanya sampai gula larut. Jangan sampai mendidih atau gula mulai mengental. 4. Masukkan larutan gula ke dalam larutan coklat. Aduk rata. 5. Masukkan tepung, coklat bubuk, dan baking powder sambil diayak. Masukkan garam. Aduk rata. 6. Tuang dengan sendok ke loyang yang sudah dioles margarin dan atau dialas baking paper. Beri jarak yang cukup, karena adonan akan sedikit meleber ketika dipanggang. 7. Panggang selama 9-10 menit. 8. Angkat, biarkan sampai suhu ruang. HOMEMADE 🏡 • Smashed Chickpea & Avocado on Toast 🥑 • Return of the avocado toast series 🥳 • This is a delicious spread to have for breakfast! Full of protein and healthy fats 🥰 keeps you fuller for longer 👋🏼 • P.s. don’t throw away the chickpea water!! Check out my 2 ingredient chocolate mousse to see why 😉 • ________________________________________________________ Ingredients: 1 can chickpeas, drained 1 avocado 1 tsp extra virgin olive oil 1/2 red onion, diced 1 small clove garlic, minced (or sub garlic powder) Chilli flakes, to taste 1/2 fresh lemon, juice only, to taste Salt and pepper, to taste Fresh herbs 🌿 for garnish (coriander/basil/parsley) Method: In a bowl, fully smash your chickpeas and avocado, use a fork or potato masher. Then add the olive oil, garlic, lemon juice, salt, pepper, chilli flakes accordingly. Mix in the herbs and red onion! Taste and add if needed! Serve on toasted bread and enjoy 😊 easy stuff!
